Lattes

large product photo   The Caffé Latte

The latte, a rich combination of espresso, steamed milk, and milk foam, can be thought of as the basic building block of the entire family of espresso drinks. With few exceptions (including straight espresso and the americano) most espresso drinks are simply variations on the latte.

Fun fact: the correct spelling is in fact "Caffé Latte" which is Italian for "coffee" and "milk". If you spell ie "Café Latte" you're combining Italian with French and spouting international gibberish.

Steaming the milk and making the foam is probably the most challenging part of making a good latte, and is more of an art than a science. Here's a good video that walks you through how the pros do it.
